Joint inspection with S. Bennett. Inspection recorded by S. Bennett. **03e - Hold cold at 41 °F or less (Regulation Section 3-501 Temperature) Cold potentially hazardous food is not held at a temperature of 41°F or colder.

Whipped butter with herbs and garlic, bagged noodles, and sliced tomatoes measured between 45F-50F with investigator's calibrated thermopen. These items were the first line of the cold hold drawer, and all other items in the drawer measured 41F or colder. Per operator, food had been moved from walk-in cooler 3 hours prior and had not been prepared in the last 4 hours. Cold potentially hazardous food must be held at a temperature of 41F or colder. Operator returned food to walk-in cooler to cool quickly. Violation corrected. No re-inspection required. 14c - Floors; walls; ceilings in disrepair (Regulation Section 6-401 Cleaning Physical Facilities) Floor, walls, ceilings, and attachments are not clean.

six aged insect bodies and a small amount of debris were found in the office next to the freezer and under the wire shelving in dry storage.
