Our tastiest partnership yet! We teamed up with Little Man Ice Cream to create a climate action-inspired ice cream flavor. Not Today, Apocalicks! is a zesty orange cream base with delicious rye shortbread cookie bits swirled in. Why rye? The proceeds from each scoop will support the Rye Resurgence Project, an initiative that helps save water and prevent Dust Bowl conditions in Colorado’s San Luis Valley through sustainable practices.

Supporting The Rye Resurgence Project
Founded by Sarah Jones and Heather Dutton, the Rye Resurgence Project works to grow awareness and demand for San Luis Valley-grown, high alpine rye to help secure a sustainable future for the agricultural region.
The San Luis Valley contributes nearly 40% of Colorado’s agricultural productivity and has been a vibrant agricultural center since before Colorado’s statehood. However, decades of severe drought and climate impacts have diminished San Luis Valley Aquifers. This vital part of Colorado’s food supply now faces a perilous future.
That’s where rye comes in. Rye requires about 12 inches of water to grow, where crops such as barley or potatoes require an average of 18-24 inches. This difference is huge in a region that is working to find ways to conserve water to help balance Rio Grande water use with supply.
Representing a collective of 10 local farmers, the Rye Resurgence Project officially launched in 2024 as a response to these rapidly decreasing groundwater levels and the increase in dust bowl conditions across the region.
A naturally resilient and hearty winter cover crop, rye gives farmers additional options for major water savings and improved soil health. Whether grown with minimal-to-no intervention, as Organic Certified, or Regenerative Organic Certified, all 'Resurgence Rye' grown by partnering farmers utilizes regenerative agricultural practices to enhance soil health and restore area aquifers. Plus, the high-elevation conditions of the region impart a unique depth to the flavor profiles of the rye.
The project works with millers, bakers, brewers, distillers, chefs, and other partners in Colorado’s food and beverage economy to encourage buying of the 'Resurgence Rye.’ These unique rye goods further help to enhance public knowledge, appreciation, and desire for the environmentally-beneficial, local grain.
Building a market demand for this rye gives local farmers a way to keep farming all while saving water to restore aquifers, improve soil health, and earn a living wage without the added risks and burdens that typically fall on the producer as environmental and economic needs shift under the pressures of a changing climate.
